Seabream baking on the skin

  • 2 pcs Dorade
  • 4 tblsp Sunflower oil


  • Fillet the sea breams and save the bones for a broth. Put a frying pan on the heat and turn the heat half high. The oil has to simmer, then the temperature is right. Season the sea breams on the meat side with salt and pepper. Then place them on the skin in the frying pan. Bake gently until the top is almost white. Then remove them from the pan and place them on heated plates. Cover with aluminum foil and let it rest for a few minutes. You can use this time to, for example, finish a sauce and arrange the side dishes on the plates.
