  • Remove the tentackles from the body and clean. Vacuum and cook sous vide at 82.2 ºC for 5 hours. Then cool down quickly or bake in the olive oil or butter immediately. serve with bean cream and spinach, sprinkle with pepperoni powder. Or serve with a running earth potato puree with parsley and espelette pepper.
