Italian meringue

Ingredients
  

  • 250 g Sugar
  • 200 g Egg white
  • 60 g water

Instructions
 

  • Cook the water and sugar until the temperature is 116ºC. Whisk the egg whites in the machine until stiff and blend slowly with the sugar sirup. Keep on whisking until the temperature is lukewarm.
