To make the endive stew an excellent stew, we need to be creative.
We give an example of how to make a creative version of this stew, other versions are very welcome.
The one we have in mind is with a caramel sauce, based on beer. It gives a bitter and sweet taste to the bitterly endive stew. The presentation is a ring of stew on top of a stripe of caramel sauce. To make it a tri dimensional dish, we put a slice of baked bacon on top and sprinkle it with a frisée salad, which has also a slight bitterly taste. On the side we put some slices of a Dutch meatball.
