Eggplant and pepper salad

  • 1 Pieces grote aubergine
  • 1 Pieces zoete paprika
  • 0,5 tsp gerookte paprika
  • 3 Tablespoon Arachide olie
  • 2 Cloves knoflook fijngesneden
  • 2 tsp Vissaus
  • 2 pieces Spring onion finely chopped
  • zout/ peper.


  • Bake the eggplant and sweet peppers in the oven black. (20 minutes, 250 C). Pack them directly from the oven in plastic. Leave 10 min.
  • Meanwhile, heat the oil with smoked peppers in a small saucepan. After a few minutes add garlic and fish sauce. 30 sec let bubbTblspand then add the spring onion and cook softly (30 sec). Set aside.
  • Remove the skin from eggplant and pepper. Cut lengthways into strips and place on a plate. Sprinkle with the sauce just before serving.
