Eggplant and pepper salad
Ingredients
- 1 Pieces grote aubergine
- 1 Pieces zoete paprika
- 0,5 tsp gerookte paprika
- 3 Tablespoon Arachide olie
- 2 Cloves knoflook fijngesneden
- 2 tsp Vissaus
- 2 pieces Spring onion finely chopped
- zout/ peper.
Instructions
- Bake the eggplant and sweet peppers in the oven black. (20 minutes, 250 C). Pack them directly from the oven in plastic. Leave 10 min.
- Meanwhile, heat the oil with smoked peppers in a small saucepan. After a few minutes add garlic and fish sauce. 30 sec let bubbTblspand then add the spring onion and cook softly (30 sec). Set aside.
- Remove the skin from eggplant and pepper. Cut lengthways into strips and place on a plate. Sprinkle with the sauce just before serving.
