Egg pasta

Ingredients
  

  • 250 g Flour "00"
  • 120 g Eggs
  • 60 g Egg yolks
  • 2 g Salt

Instructions
 

  • Mix the flour with the salt. Place the flour (not all flour, keep some aside) in a ring on the work surface and place the egg yolks and whole eggs in it.
  • Carefully mix the flour with the eggs, always taking a little flour with your fork or with your fingers. At the end you can see if you have enough flour or what to do with the withheld flower. If it is too dry, add a splash of water.
  • Knead the dough well to a smooth dough. This takes 5 to 10 minutes. Then put it in plastic foil for at least 30 minutes.
  • Then cut the dough into smaller portions so that it can go through the pasta machine. You can also roll it out with a rolling pin.
